Panceta adobada is a semi-cured product made entirely in the traditional way. The first step is to add salt to it and allow it to settle for two or three days in order for it to acquire a slightly salty taste.

The excess salt is then removed and paprika is added. Once all the ingredients have been added, it is allowed to dry and then vacuum-packed for sale.
